Pumpkin Muffins/Cupcakes with Carrot Marmalade Creme Cheese Frosting

Simple and easy-to-make!

Ingredients for the Muffins:

  1. 1 Pkg of Spice Cake Mix (I use Duncan Hines)
  2. 1 Can (15oz) Pumpkin
  3. White Chocolate chips and/or Pecans


  4. Ingredients for the Frosting:

    1. 8oz of Softened Cream Cheese
    2. 1/4 Cup Softened Butter
    3. 1 Tsp of Pure Vanilla Extract
    4. 4 Cup Confectioners Sugar
    5. 1/3 Cup Stonewall Kitchen Orange Carrot Marmalade


    Instructions for Frosting:

    1. Mix the cream cheese, butter and vanilla extract in a bowl. You can use an electric mixer, if desired.
    2. Add the confectioner's sugar and marmalade and beat until smooth. And frosting is ready!


    3. Instructions for the Muffins/Cupcakes:

      1. Prepare 12 regular size muffin tins.
      2. In a large bowl, combine just the cake mix and pumpkin until well blended.
      3. Once is blended add white chocolate chips and/or pecans to taste.
      4. Batter should be thick and ready, prepare 12 regular size muffin tins and spooned the batter
      5. Preheat oven and bake according to package directions for muffins.
